Hurricane Sandy prompted me to find a good stew recipe. All this talk of staying safe and getting prepared. I just wanted to have a whole pot of something delicious and healthy and for my house to be a safe haven for me, my boyfriend and any of our friends that wanted to come over.
I learned a lot from this recipe. Mirepoix (a mixture of onions, celery and carrots). Deglazing with red wine. I even had to bake this stew. Is that normal?

I was getting a little bored with cooking. I couldn’t think of anything I wanted to make on my own other than the ever day meals which I never post here. Luckily, I’m motivated once again. If ever you can’t think of new recipes, go through a random cook book. thats what i did. It wasn’t a vegetarian or vegan friendly cook book but I was at a friend’s house and it was there so I flipped through patiently and wrote down everything I thought sounded wildly fun. Haha. Maybe kale stuffed onions sounds a little strange. That’s why I wanted to experiment with it. I even decided to get ridiculously adventurous and serve it to guests! Unless they lied to me and i’m lying to myself, this dish is amazing if you are a fan of onions.
This recipe can be vegan friendly as well if you cut out the parmesan.

The time is now! Mangos from India, the Caribbean, Mexico, Guatemala and Costa Rica are right at the end of their prime time here in New York. This info put me in a quick and easy line of thinking. Mango mousse sounds so special, looks so beautiful and has the perfect light and fluffy taste that summer time evokes. Make it soon or else you’ll have to wait until next April.

Hello, hello! I’m sorry I haven’t made a post here in a while. I’ve been doing some traveling and work stuff. Fun, fun, fun. I haven’t stopped exploring vegetarian and vegan recipes though.
Inspiration comes from anything and everything. The inspiration for cooking this up came from a cold I caught. Nothing sounded appetizing to me until I found this recipe for veggie and rice soup. The brown rice is key here. I wouldn’t advocate eating white rice in place of it. When making the choice of what rice to eat, try to remember that brown rice is a whole grain with many health benefits that white rice does not have. In changing an unhealthy diet to a healthy one, this is one simple difference to note. Make your food work for you! Think about what dietary minerals and vitamins you are getting from whatever you are eating ESPECIALLY if you are sick. c; The only other thing about this recipe I need to mention is that there will be plenty of broth if you want to add more vegetables.
